Ingredients:
- 200g tagliatelle pasta
- 2 tablespoons olive oil
- 400g chicken breast, cut into pieces
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 100g broccoli florets
- 100g snow peas
- 1 carrot, julienned
- 1 cup chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce (optional)
- 1 teaspoon dried thyme or Italian seasoning
- Salt and pepper, to taste
- Fresh cilantro or parsley (for garnish, optional)
Directions:
- Cook the tagliatelle: In a large pot of boiling salted water, cook the tagliatelle according to the package instructions, until it’s al dente. Drain and set aside.
- Cook the chicken: Heat olive oil in a large pan over medium heat. Add the chicken pieces and cook until both sides are golden brown and cooked through, about 5 to 7 minutes. Remove the chicken from the pan and set aside.
- Cook the vegetables: If needed, add more olive oil to the same pan. Add the sliced onion and minced garlic, sautéing for about 2 minutes until fragrant and translucent. Next, add the bell pepper, broccoli, snow peas, and carrot. Stir-fry the vegetables for about 5-7 minutes, or until they are tender yet still slightly crunchy.
- Combine the ingredients: Return the cooked chicken to the pan. Add the cooked tagliatelle, chicken broth, soy sauce, and hoisin sauce (if using). Stir everything together and let it simmer for 3-4 minutes until heated through. Season with thyme or Italian seasoning, salt, and pepper to taste.
- Finish and serve: Turn off the heat and, if desired, garnish with fresh cilantro or parsley for a burst of color. Serve hot and enjoy!
